The Thai soup tom yum goong is famous around the world. Just about every foreigner likes it. The dish I want to show you today is a dry version of this lemongrass soup. This one is called khao pat dtom yum goong. In English I will call it Lemongrass Shrimp with Fried Rice. Most Thai people don’t seem to know this dish. They say it is made for foreigners. That could be partly true, but I ate it this afternoon at my local foodshop in Samut Prakan. Their menu is in Thai so it is not aimed at foreigners. I actually liked it. It was certainly different than the usual fried rice that I sometimes eat.

The picture above shows you the basic ingredients. I will list them for you:

1. kaffir lime leaves
2. sliced lemongrass
3. sliced kaffir lime leaves
4. chopped galangal
5. red chilis
6. chopped shallots
7. coriander and saw-leaf coriander
8. straw mushrooms
9. galangal
10. lemongrass

The cooking method is quite simple. First you heat up your wok and then add the fresh shrimps. When these are ready add the shallots, galangal, kaffir lime leaves, lemon grass and chili. Give it a good stir. Then add the roasted chili paste (nam prik pao) and roasted chili oil. Add a plate of cooked rice. Stir well for a minute or two. Add the straw mushroom and mix again. Then season with soy sauce, fish sauce, sugar, a dash of MSG and some salt. After a good stir, finish by adding some lemon juice and then the normal coriander and the saw-leaf coriander. Ready to serve! Very delicious.
