Stir-fried Kale with Crispy Pork

You can’t go far wrong with Pad Kana Moo Krob. It’s one of my favourite Thai food dishes. As I eat a lot of street food it’s important for me to get as many vegetables as I can. And kale is one of the best choices. One cup of kale apparently contains 15% of the daily requirement of calcium and vitamin B6, 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K.
